Tasting notes
Eighty Nine Point Six is sourced from a small selection of standout parcels across our three vineyards, on chalk soils laid down 89.6 million years ago. The fruit exhibits vibrant citrus, orchard characters, and precise mineral structure and has been blended exclusively for magnum. Juice is settled for 24 hours before fermentation: 80% in stainless steel and 20% in four old 228-litre French oak barrels, each inoculated with a different yeast strain, contributing subtle texture and complexity. Bottled only in magnum and given a minimum of 56 months on lees to enhance the mouthfeel and depth. No malolactic fermentation, bright acidity and chalk-driven minerality define the finish.
