We've selected only the best Chardonnay clones from our Upper Levels vineyard and chosen particular yeasts like VL1 and CX9, known for enhancing elegance and complexity. Paragon is comprised of 50% stainless steel fermented wine, 50% fermented in Oak Foudre and a minimum of 32 months on lees, gived this wine a sumptuous mouthfeel. With no malolactic fermentation and no fining, our minimal intervention approach allows the wine's true essence shine through, with the Chardonnay's purity being the star of the show. Deeply complex, round and fresh, Paragon lingers on the palate. "This is concentrated and linear with a slight saltiness as well as crystalline citrus fruit. Apple, pear and even some peach notes as well as the ripe citrus, with layers of flavour. Crystalline and taut with lovely precision. Serious stuff. 96/100" Jamie Goode
