Welcome to the upper levels, our largest vineyard. From here you can see the River Test cutting its way through the valley. As September and October approach, harvest becomes all-consuming. We monitor the fruit as it ripens and when the moment is right we send out teams of up to 30 people to select the finest bunches to bring down to the winery to make this year's vintage.
Following harvest there is a quiet period before winter takes hold. During winter pruning becomes the most important task. This is where we remove last year's wood and get the vines ready for the new year's growth.
As you can see this vineyard is surrounded by a deer fence. You may be fortunate enough to see one. One thing that you'll certainly see is pheasants because we seem to have a resident population and upper levels.

ここは、私たちの畑の中で、最大規模を誇る場所です。
ここからは、テスト川が、谷間を縫うように流れていく様子が見えます。
9月から10月にかけては、収穫のシーズンを迎え、畑全体が、その作業に集中します。
果実の成熟具合を注意深く観察し、最適なタイミングが来たら、収穫を開始します。
最大、30名のチームが畑に入り、最も質の高い房を、一房ずつ、丁寧に手摘みし、ワイナリーへと運びます。
これが、その年の、ヴィンテージワインになるのです。
収穫が終わると、冬が本格的に訪れるまで、畑は、一時的に静かな時期に入ります。
そして、冬の間の、最も重要な作業が、剪定です。
前年に伸びた枝を取り除き、新しい年の成長に備えて、ぶどうの木を整える作業です。
ご覧の通り、この畑は、鹿よけフェンスで囲まれています。
運が良ければ、鹿の姿を見られるかもしれません。
そして、ほぼ確実に見られるのがキジです。
この畑には、どうやら常駐している群れがいるようで、アッパーレベルズの、名物のひとつになっています。
